I am not sure when I did taste this for the very first time, but this works for me, both as a snack, but also as a sidedish for something else.
It is a fine little dish on the table, and those potatoes always make their way to peoples plates.
List of ingredients for 1 person:
- 1 big potato
- 25 g. of butter
- Seasalt and pepper
- 1 egg
- Fresh herbs for topping
- Optional - Olive Oil
And this is what to do:
Preheat the oven to 200 degress.
Wash the potato, do not peel it. Put it in alufoil, and bake in the oven for around 1 hour, till it is almost done, but make sure it is not overdone.
Take it out of the foil, and let it rest for a little.
With the potato lying, cut off the top, Dig out the inside of the potato with a spoon, just as much that it make room for an egg.
Add salt and pepper, and the butter in the hole, and add the egg.
Put the potato back in the oven, and bake it till the egg becomes white.
Put a little butter or olive oil on top, and add some fresh herbs or fine cut spring onions. Fresh chives works fine for me :)
Serve hot and... Enjoy.
